You don’t need to eat less, but you do need to eat right.

Sample Breakfast Plan

Chilli, Tomato and Shallot Scramble with Crushed Avo

Serves 1

½ chilli finely diced (keep a few bits to garnish)

5 cherry tomatoes diced

1 banana shallot diced

3 large eggs

1 ripe avocado

4 slices of sourdough bread or 2 slices cut in half if it’s too large

  • Spray a frying pan with oil and cook the onions on a low/medium heat until starting to colour.

  • Add the diced tomatoes and chilli and cook for a couple of minutes.

  • Beat the eggs and put them in the pan.

  • Keep the eggs moving until scrambled to your liking.

  • Toast your sourdough.

  • Smash the avocado with a fork.

  • Top one slice with your scrambled egg and one with smashed avocado.

  • Finish with a sprinkling of chilli and enjoy.
